Hate Cabbage? So did I once upon a time before walking into my favorite Whole Foods Market in San Diego, California and trying this basic yet utterly delightful cabbage crunch recipe. The honey dressing mix adds just the right touch of tangy sweetness to satisfy even the fussiest palate. I hope you enjoy this recipe as much as I do.

Ingredients
1 medium head green cabbage shredded 1 teaspoon black sesame seed, toasted (use as topping after coating with honey dressing) 1 bunch (about 8) scallions, finely sliced 1/4 cup sliced almonds
- Honey Dressing -
1/2 cup organic extra virgin olive oil 1/4 cup organic apple cider vinegar (free from synthetic pesticides and herbicides) 2 tablespoons honey sea salt, to taste
Note: Acetic acid, the primary ingredient found in apple cider vinegar, is attributable to its strong and characteristically tart taste. A little bit goes a long way.
Organic, unpasteurized and unfiltered apple cider vinegar contains the “mother of vinegar,” a healthful, gelatinous mass which occurs via the initial chemical reaction between the yeast and fruit. This substance is composed of essential enzymes and minerals. Pasteurization and filtration destroy the enzymes and nutrients naturally found in raw organic apple cider vinegar. These nutrients include minerals such as phosphorus, magnesium, calcium and iron, and vitamins including vitamin C, vitamin E, vitamin A, and vitamin B6.
Directions
Toss all ingredients together (minus black sesame seeds) and refrigerate until ready to dress and serve.
Honey Dressing: Mix cider and honey together. Pour in oil drop by drop and whisk until emulsified. Chill for several hours to thicken. Before serving, whisk again and pour over salad. Toss to coat along with toasted black sesame seeds and cracked sea salt.

Fun Fact – Apple cider vinegar has been used for centuries as a folk remedy for a selection of chronic ailments. The ancient Egyptians, as far back as 3000 BC, and even the father of modern medicine, Hippocrates, sang the praises of its properties.
